One Pan Rosemary Chicken with Sweet Potatoes and Green Beans {Freezer Friendly}
This freezer dish was inspired by a one-pan chicken, sweet potato, and green bean dish by a blogger who no longer blogs and whose site is sadly no longer available (paleomadepainless.com). The seasoning for the recipe was then snagged from eatingwell.com's rosemary chicken with sweet potatoes skillet meal.
This one-pan freezer chicken meal is gluten free and dairy free. It's tasty, low-cost, and simple to prepare with no pre-baking or pre-cooking needed. Just assemble and freeze. What's not to love?

Ingredients
- 3 chicken breasts, cut in half
- 1 Large sweet potato, diced evenly
- 2 cups green beans
- 1 tbsp olive oil
- 4 garlic cloves minced
- 3/4 tsp rosemary
- 3/4 tsp salt (himalyan, sea salt, etc.)
- 1/2 tsp black pepper
Instructions
- Prepare seasoning by adding olive oil, garlic, rosemary, salt, and pepper to large plastic bag. Shake to mix.
- Place chicken and sweet potatoes in the plastic bag. Then seal the bag and shake bag vigorously to coat the chicken and sweet potatoes. (Optional: if you have time, let the ingredients marinate in fridge for a half hour or so before freezing).
- Place the chicken, sweet potatoes, and green beans in 9″ x 13″ pan. Pour the remaining marinade over the dish, and add a little bit of salt and pepper to the green beans.
- Cover dish with plastic wrap and lid to freeze.
- Thaw in fridge overnight or the day of baking. Bake for about 60 minutes at 350 °F or until chicken is done. Flip ingredients about halfway through the baking time for even cooking.
Note: the green beans were not mixed with the chicken and sweet potatoes for easy separating prior to baking. If you don’t want super well done green beans, take them out while the chicken and sweet potatoes bake almost completely. With about 10-15 minutes left, add the green beans to the dish.
