Cheesy Spinach Tortellini {Freezer Meal}

This recipe is from Thriving Home. I was looking for a recipe that was vegetarian-friendly, filling, and somewhat healthy. The simplicity of the recipe and the call for fresh spinach were a sell. So, here you go. When shopping for ingredients, I look for marinara sauce that is lower in sugar, free of high fructose corn syrup, and has added vegetables and/or spices (garlic, basil, etc.). I've used several different types of marina sauce. As Thriving Home suggests, I use the cheese tortellini found at my local Trader Joe's. I also use the Trader Joe's organic spinach.

Ingredients

  • 1 package of cooked cheese tortellini
  • 1 jar of marinara sauce
  • 1 cup of fresh spinach
  • 2 cups of shredded mozzarella or Italian mix cheese

Instructions

  • Cook cheese tortellini according to package instructions.
  • Spray bottom of container with thin layer of non-stick cooking spray (I use olive oil) followed by a thin layer of marinara sauce
  • Add half of the cheese tortellini, marinara sauce, spinach, and cheese.
  • Repeat layers above and end with cheese.
  • Cover with plastic wrap and lid to freeze.
  • To bake, thaw in fridge 24-48 hours and cook at 375°F for 20-25 minutes or until cheese is golden and bubbling.
